My Lazy but Healthy Afternoon Wrap
Because some days you just don’t feel like cooking….
Here’s what I make on days when I just don’t feel like cooking. It takes less than 15 minutes to prepare, and it’s both healthy and satisfying. All you need to do is boil some eggs, fry your plantain, wrap everything up, and add your favourite veggies. That’s it, you’re good to go!
What You’ll Need:
For the Wrap:
Spelt flour
Water
Mix your desired amount of spelt flour and water together until you get a smooth, pancake-like batter. Pour the mixture onto a frying pan and cook on medium heat until the wrap is fully cooked. It should look and feel similar to a soft pancake.
Wrap Fillings (what I use):
Tahini and tomato sauce
Lettuce
Fried plantain
Hard-boiled eggs
Rocket
Watercress
Avocado
Cucumber slices
A sprinkle of salt
Feel free to add your own choice of protein and any other veggies you love. This wrap is my go to on lazy days because it’s super flexible and perfect for when I want something quick, tasty, and nutritious.
